GARLIC AND ANCHOVY SAUCE

This sauce thickens best if its ingredients start at room temperature. It’s easiest to use a blender, though traditionally it is made using a pestle and mortar and served from the mortar. Use it on watercress or chicory salads or on pasta, or serve it with crusty rustic bread.

2–3 garlic cloves, peeled

120ml/4fl oz/½ cup olive oil

8 tinned (canned) anchovy fillets in oil, drained

1 tsp lemon juice

Either put the ingredients into a blender and whizz until smooth, or put the garlic into a mortar, crush with a pestle, then slowly pour in the oil, stirring constantly. Add the anchovies and lemon juice, mash with a fork, then grind with the pestle.
